Fennel seeds have been added to food and infused into teas for millennia, and have been much revered since ancient times for their beneficial properties. Fennel tea has a natural sweetness and earthiness, with the slightest hint of aniseed. It is a soothing and settling drink that adds a moment of calm in otherwise busy days; in essence it is meditation in a cup. It is even said that fennel tea was given to warriors before battle to give them courage though it was probably to sooth their nerves!
